Golden Pumpkin Muffins

Pumpkin, spice, and everything nice — these golden, aromatic muffins embody the warmth of autumn in every bite. Moist and tender, they fill the kitchen with the nostalgic scent of cinnamon and sugar while baking. A perfect companion for crisp mornings or cozy afternoons, they balance sweet pumpkin flavor with a light, comforting crumb.

1 (14 oz) can of raw pumpkin • 3 ½ c. all-purpose flour • 3 c. sugar • 4 eggs • 1/2 c. oil • 1/2 c. applesauce • 2 tsp. cinnamon • 2 tsp. baking soda • 1 tsp. salt

Combine all ingredients and pour into greased muffin pans. Bake at 350°F until a toothpick inserted comes out clean. (1/2 tsp. of allspice or nutmeg is a delicious addition!)

Bake 1 hour for 3 loaf pans or 1 hour and 15 minutes for a bundt pan.

Softly spiced, golden-hued, and delightfully moist, these muffins capture the essence of homemade fall baking.
