Winter Lentils

Lentils are among humanity's oldest cultivated foods. This simple dish, finished with olive oil and sour wine, has roots as far back as the Bronze Age, long before any written recipes from that period have been found.

• 1 cup brown or green lentils
• 3 cups water
• 1 small onion, finely chopped
• 1 bay leaf
• 1-2 cloves garlic, minced
• 2-3 tbsp olive oil
• 1-2 tbsp red wine vinegar
• 1 tsp dried oregano or thyme
• salt and pepper to taste

1. Rinse lentils thoroughly.
2. Place lentils, water, bay leaf, and onion in a pot.
3. Bring to a boil, then reduce to a gentle simmer.
4. Cook uncovered 25-30 minutes, until tender but not mushy. Add garlic in the final 5 minutes.
5. Remove from heat. Discard bay leaf.
6. Stir in olive oil, vinegar, herbs, and salt.
7. Rest 5 minutes before serving.

*Serve with rustic bread
